Ingredients

  • 1 cup graham cracker crumbs
  • ¼ cup granulated sugar

  • 3 (8-ounce) packages cream cheese softened
  • 1 cup granulated sugar
  • ½ cup sour cream
  • ½ cup heavy cream
  • 3 large eggs
  • 1 tablespoon lemon zest
  • 1 tablespoon lime zest
  • ¼ cup fresh lemon juice
  • ¼ cup fresh lime juice
  • 1 teaspoon vanilla extract
  • 1 cup cherry pie filling fresh or canned
  • ½ cup chopped pistachios

Instructions

  • Preheat the oven to 325°F (165°C) and prepare a 9-inch springform pan with parchment paper.
  • Mix graham cracker crumbs, granulated sugar, and melted butter until it resembles wet sand; press into the springform pan and bake for 8-10 minutes.
  • In a large bowl, beat cream cheese and granulated sugar until smooth; add sour cream, heavy cream, and vanilla, blending until silky.
  • Add eggs one at a time, mixing gently after each; then stir in lemon zest, lime zest, lemon juice, and lime juice.
  • Pour the cheesecake batter over the cooled crust and bake for 50-60 minutes until the edges are set and the center has a slight jiggle.
  • Turn off the oven and leave the door slightly ajar to cool gradually for better texture.
  • Once cooled, spread cherry pie filling over the cheesecake and sprinkle with chopped pistachios; garnish with mint leaves if desired.
  • Slice and serve chilled.
