Ingredients

  • 1 ½ cups all-purpose flour
  • ¾ cup sugar
  • 1 ½ teaspoons baking powder

  • 1 tablespoon poppy seeds
  • Zest of 1 lemon
  • 2 tablespoons lemon juice
  • 2 large eggs
  • ½ cup buttermilk

Instructions

  • In another bowl, whisk lemon zest, juice, eggs, buttermilk, and oil until smooth. The zest smells amazing. Whisk to avoid lumps.
  • Pour the wet mix into the dry ingredients. Stir gently until just combined. A lumpy batter is fine—it’s okay!
  • Divide the batter into muffin cups, filling them two-thirds full. Bake for 18-20 minutes. Check with a toothpick—it should come out clean.
