Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter softened
  • 3 cups granulated sugar
  • 6 large eggs at room temperature
  • 1 cup sour cream at room temperature
  • 1/2 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup sifted powdered sugar (for the glaze)
  • 2 to 3 tablespoons milk or cream (for the glaze)

Instructions

  • Preheat your oven to 325°F (165°C) and grease/flour a large bundt pan.
  • In a medium bowl, whisk together the flour, baking soda, and salt; set aside.
  • In a stand mixer, beat the butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition.
  • Stir in the sour cream, lemon juice, and lemon zest.
  • Gradually add the dry ingredients in three parts, mixing gently after each addition; stir in vanilla extract.
  • Pour the batter into the prepared bundt pan and bake for 70 to 80 minutes, or until a toothpick comes out clean.
  • Cool the cake in the pan for 15 minutes before transferring it to a wire rack.
  • For the glaze, mix the powdered sugar, milk, and vanilla until smooth; pour it over the cooled cake.

Notes

For extra lemony goodness, brush the warm cake with a simple syrup made from equal parts sugar and lemon juice.
Store in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
