- 1 cup unsalted butter softened
- 1 cup granulated sugar
- 1 large egg
- 2 tbsp lemon zest
- 2 tbsp fresh lemon juice
- 2.5 cups all-purpose flour
- 0.5 tsp baking powder
- 0.25 tsp salt
Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.
In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
Add the egg, lemon zest, and lemon juice, and mix well until combined.
In another bowl, whisk together the all-purpose flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Using a tablespoon, scoop the dough and place it on the prepared baking tray, flattening each cookie slightly.
