- 30 g Powdered sugar
- 1/2 tsp Salt
- 100 g Cold butter
- 1 Egg yolk (size M)
- 2-4 tsp Cold water
Mix the flour, powdered sugar, and salt in a bowl.
Add cold butter in cubes and rub until it resembles coarse crumbs.
Add egg yolk and cold water; knead quickly and chill in the fridge for at least an hour.
Roll out the chilled dough into a circle about 3–4 mm thick and fit it into the tart pan.
For the lime curd, zest and juice the limes; whisk sugar, egg yolks, eggs, and salt in a saucepan.
Add lime juice and cook over low heat until thick; stir in butter until melted.
Pour the lime curd into the prepared crust.
