Ingredients

  • 1/2 cup freshly squeezed lemon juice
  • 1/2 cup granulated sugar
  • 1/4 cup Limoncello Italian lemon liqueur
  • 1/4 cup water
  • 1 cup mascarpone cheese softened
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 2 tsp vanilla extract
  • 2 tbsp Limoncello
  • 1 package ladyfingers (about 24-30)
  • 1 Zest of 1 lemon for garnish
  • Powdered sugar for dusting
  • Fresh mint leaves (optional) for garnish

Instructions

  • Make the lemon syrup by combining lemon juice, sugar, Limoncello, and water in a saucepan. Heat until sugar dissolves, then let cool.
  • In a mixing bowl, whip mascarpone, heavy cream, powdered sugar, vanilla extract, and Limoncello until stiff peaks form.
  • Dip each ladyfinger briefly in the lemon syrup and arrange in a serving dish.
  • Spread half of the mascarpone cream over the ladyfingers and repeat with another layer.
  • Cover and chill for at least 4 hours or overnight.
  • Dust with powdered sugar, sprinkle with lemon zest, and garnish with mint before serving.

Notes

Use fresh lemons for the best flavor and ensure not to soak the ladyfingers too long. Store leftovers in the refrigerator for up to 3 days. For a lighter option, you can make a low-sugar version or use non-alcoholic alternatives for the Limoncello.
