- 200 g dark chocolate
- 150 g mascarpone
- 100 g sugar
- 90 g flour
- 3 eggs
- 1 packet baking powder
- a pinch salt
Preheat your oven to 180°C (350°F).
Melt the dark chocolate either in a double boiler or in the microwave.
In a large mixing bowl, beat the eggs with the sugar until light and mousse-like.
Gently fold the mascarpone into the egg and sugar mixture.
Sift the flour, baking powder, and salt into the bowl and gently fold to combine.
Add the melted chocolate and fold until fully incorporated.
Pour the batter into greased and floured muffin tins, filling each cup two-thirds full.
Bake for 12 to 15 minutes until the edges are set but the centers are slightly soft.
Use good quality dark chocolate for the best flavor. Make sure all ingredients are at room temperature for better mixing. Don’t overmix the batter to keep the cookies tender. Store in an airtight container for up to 5 days or refrigerate for a week. These cookies freeze well for up to 3 months.
