Ingredients

  • 250 g flour (type 00)
  • zest of 1 lemon
  • 50 g sugar
  • 200 g butter (cold and diced)

Instructions

  • Mix the flour, sugar, lemon zest, and cold butter in a bowl until the mixture resembles breadcrumbs.
  • Add a splash of cold water if needed to bring the mixture into a soft dough. Wrap it in plastic wrap and chill for 30 minutes.
  • In a saucepan, combine lemon juice, milk, sugar, cornstarch, and turmeric. Stir constantly over medium heat until thickened.
  • Preheat the oven to 180°C (350°F) and roll out the chilled dough, pressing it into small tart molds. Bake for 12-15 minutes until golden brown.
  • Let the tart shells cool, then spoon the creamy filling into each shell.
  • Whip the cold cream until stiff peaks form and decorate each tartlet with a rosette of cream. Chill for 15 minutes before serving.
