Ingredients

  • 1 teaspoon salt
  • 1 teaspoon espresso powder optional
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups chocolate frosting
  • 1 1/2 cups M&M candies

Instructions

  • Preheat your oven to 350°F (177°C) and prepare two 9-inch cake pans.
  • In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, salt, and espresso powder.
  • Add buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients; mix with an electric mixer until smooth.
  • Slowly add boiling water to the batter, stirring gently until well combined.
  • Pour the batter evenly into the prepared pans and bake for 30-35 minutes, checking for doneness with a toothpick.
  • Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  • Frost the top of one layer, sprinkle with M&Ms, then place the second layer on top and frost the outside of the cake. Decorate the top with remaining M&Ms.

Notes
