Ingredients

  • 1 cup unsalted butter at room temperature
  • 1 cup granulated sugar
  • 4 large eggs

  • 1/2 tsp salt

  • 1/2 cup orange juice

Instructions

  • Preheat your oven to 325°F (165°C) and grease a 9-inch round cake pan.
  • In a large mixing bowl, cream the butter and sugar together until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, and stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  • Stir in the mixed dried fruits, chopped nuts, and orange juice until combined.
  • Pour the batter into the prepared cake pan and smooth the surface with a spatula.
  • Bake for about 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Notes

Soaking the dried fruits in orange juice for about 30 minutes before adding them to the batter adds moisture and flavor.
For variations, consider substituting all-purpose flour with whole wheat flour or making it gluten-free with a suitable flour blend.
Store the cake in an airtight container at room temperature for up to 5 days, in the refrigerator for up to 1 week, or frozen for up to 3 months.
