Ingredients

  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1 tbsp molasses
  • 2 tsp vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3 cups quick oats
  • 3/4 cup unsalted butter softened (for frosting)
  • 2 oz cream cheese full-fat, brick style
  • 3-4 cups powdered sugar
  • 1 tsp vanilla extract for frosting
  • 1/4 tsp salt for frosting
  • 1 tbsp cream if needed (for frosting)

Instructions

  • Preheat your oven to 350°F (180°C or 170°C fan forced) and line cookie sheets with silicone baking mats or parchment paper.
  • In a large bowl, beat together the butter, brown sugar, and granulated sugar until fluffy. Blend in the molasses, vanilla extract, and eggs until smooth.
  • Gradually mix in the flour, cinnamon, baking soda, and salt until incorporated, then fold in the quick oats.
  • Form the dough into balls, about 1 to 1.5 tablespoons each, and place them 2 inches apart on prepared cookie sheets. Bake for 9-11 minutes until the tops look set and golden.
  • Cool the cookies on the sheet for 10 minutes, then transfer to a wire rack to cool completely.
  • For the frosting, beat the butter until fluffy, then mix in the cream cheese until smooth. Add powdered sugar, vanilla extract, and salt; adjust sweetness with more powdered sugar or cream as needed.
  • Frost the bottom of one cookie with 1 to 1.5 tablespoons of frosting and sandwich with another cookie. Repeat for all cookies.

Notes

For an extra special touch, sprinkle sea salt on top of the frosting before adding the second cookie for a delightful salty-sweet balance.
