Ingredients

  • 1 cup rolled oats
  • 1 scoop vanilla protein powder
  • 1 ripe banana, mashed
  • 2 eggs
  • 1/4 cup almond milk
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 cup honey or maple syrup
  • 1/2 cup mix-ins (e.g., chocolate chips, nuts, dried fruit)

Instructions

  • Begin by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.
  • In a large mixing bowl, combine the rolled oats, protein powder, baking powder, and cinnamon. Stir well to distribute the dry ingredients evenly.
  • In another bowl, mash the banana until smooth. Add the eggs, almond milk, and honey, and whisk until everything is fully incorporated.
  • Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined. Fold in your chosen mix-ins.
  • Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.

Notes
