- 2 cups vanilla cake mix
- 1 cup sugar
- 1/2 cup butter at room temperature
- 3 large eggs
- 2 cups wheat flour
- 1 cup passion fruit puree
- 240 g cream cheese at room temperature
- 1 cup whipped cream
- 1/2 cup passion fruit seeds
- q.s. Fresh mint leaves for garnish
Preheat your oven to 175C (350F). Grease and flour two 9-inch round cake pans.
In a large bowl, beat the softened butter with the sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.
Gradually add the flour and vanilla cake mix to the wet ingredients, mixing until smooth. Divide the batter evenly between the prepared pans.
Bake the cakes for 25-30 minutes, or until a toothpick inserted comes out clean. Let cool completely in the pans.
While the cakes cool, beat the cream cheese in a bowl until smooth. Add the passion fruit puree and whipped cream, mixing until creamy.
Place one cake layer on a serving plate and spread a layer of filling on top. Place the second layer on top and spread remaining filling on top and sides.
Beat the whipped cream until stiff peaks form and decorate the top of the cake. Garnish with passion fruit seeds and fresh mint leaves.
