- 2 large peaches, peeled and diced
- 1 cup water
- 1 cup granulated sugar
- 1 tbsp lemon juice
In a medium saucepan, combine the diced peaches, water, sugar, and lemon juice.
Place the saucepan on the stove and bring the mixture to a boil over medium-high heat, stirring occasionally.
Once the mixture reaches a boil, reduce the heat and let it simmer for about 10 minutes, until the syrup thickens.
Remove the saucepan from the heat and strain the mixture through a fine-mesh sieve to remove the peach solids.
Let the syrup cool completely at room temperature before storing.
For an extra burst of flavor, consider adding a vanilla bean while the mixture simmers. Store the syrup in the fridge for up to 2 weeks in an airtight jar. You can also freeze it in ice cube trays for up to 6 months. Don't forget to use the leftover peach pulp in smoothies or desserts for added flavor and to reduce waste!
