Ingredients

  • 3 sticks unsalted butter softened
  • 1.5 cups light brown sugar
  • 1 package cream cheese 8 oz, softened
  • 1 cup granulated sugar
  • 5 large eggs
  • 1 tbsp pure vanilla extract
  • 1 cup buttermilk
  • 0.5 cup sour cream
  • 1 cup crushed pineapple drained
  • 3 cups Swans Down cake flour
  • 1 tbsp baking powder
  • 0.5 tsp salt

Instructions

  • Preheat your oven to 325°F (165°C). Grease and flour a bundt pan.
  • In a large bowl, beat the butter, brown sugar, granulated sugar, and cream cheese until light and fluffy.
  • Add the eggs one by one, followed by the vanilla extract.
  • In a separate bowl, mix the buttermilk, sour cream, and drained crushed pineapple.
  • In another bowl, combine the cake flour, baking powder, and salt. Whisk together.
  • Add the dry and wet ingredients to the main mixture, alternating between the two.
  • Pour the batter into the prepared bundt pan and bake for 60 minutes or until a toothpick comes out clean.
  • Let the cake cool before unmolding it.
  • Prepare the glaze by combining powdered sugar, melted butter, and crushed pineapple. Adjust consistency with pineapple juice.
  • Drizzle the glaze over the cooled cake and let it set before serving.

Notes

To enhance the flavor, try adding a dash of cinnamon to the cake batter for a warm complement to the tropical notes.
Store the cake in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. For longer storage, wrap and freeze for up to 2 months.
Garnish with fresh pineapple slices and shredded coconut for an appealing presentation.
