Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup crushed pineapple well drained
  • 1 cup whipped cream

Instructions

  • Preheat your oven to 350°F (175°C).
  • Mix graham cracker crumbs with melted butter until it resembles wet sand, then press into the bottom of a springform pan.
  • In a large bowl, beat softened cream cheese and sugar until smooth and creamy.
  • Add vanilla extract, crushed pineapple, and whipped cream to the cream cheese mixture, mixing gently until combined.
  • Pour the filling over the prepared crust and smooth it out with a spatula.
  • Bake for 15 minutes at 350°F (175°C), then reduce the heat to 325°F (160°C) and bake for another 50 minutes.
  • Let the cheesecake cool completely on a wire rack before transferring it to the fridge.
  • Chill for at least 4 hours, or overnight if possible.
  • Before serving, decorate the top with fresh pineapple pieces.
