Ingredients

  • 2 1/2 cups shredded coconut
  • 3/4 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2 large egg whites
  • 1/4 tsp salt
  • 1/2 cup chopped pistachios
  • 1/2 cup melted dark chocolate optional

Instructions

  • Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, almond extract, and chopped pistachios until well mixed.
  • In a separate bowl, beat the egg whites and salt until stiff peaks form, then gently fold them into the coconut mixture.
  • Scoop small mounds onto the prepared baking sheet, spacing them about an inch apart, and bake for 18-20 minutes until lightly golden.
  • Once cooled, drizzle melted dark chocolate over the tops of the macaroons, if desired, and chill to set the chocolate.
