Ingredients

  • 100 g shelled pistachios
  • 2 sheets puff pastry
  • 100 g sugar
  • 200 g almond flour
  • 3 pieces eggs
  • 50 g melted butter
  • 1 yolk egg yolk for glazing
  • 1 tbsp vanilla extract

Instructions

  • Preheat your oven to 180°C (350°F).
  • Grind the pistachios into a fine powder using a blender or food processor.
  • In a large mixing bowl, combine almond flour, sugar, and ground pistachios.
  • Add the eggs, melted butter, and vanilla extract to the dry ingredients; mix until smooth.
  • Unroll one sheet of puff pastry onto a baking tray lined with parchment paper.
  • Spread the frangipane filling over the pastry, leaving a 2 cm border around the edges.
  • Place the second sheet of puff pastry on top and seal the edges.
  • Create decorative patterns on top with a sharp knife and brush the top with egg yolk.
  • Bake for 30-35 minutes or until golden and set.
  • Let the cake cool slightly before serving.

Notes

For an extra burst of flavor, add a pinch of cardamom to the frangipane mixture. This cake can be made ahead of time and refrigerated before baking.
