- 100 g shelled pistachios
- 2 sheets puff pastry
- 100 g sugar
- 200 g almond flour
- 3 pieces eggs
- 50 g melted butter
- 1 yolk egg yolk for glazing
- 1 tbsp vanilla extract
Preheat your oven to 180°C (350°F).
Grind the pistachios into a fine powder using a blender or food processor.
In a large mixing bowl, combine almond flour, sugar, and ground pistachios.
Add the eggs, melted butter, and vanilla extract to the dry ingredients; mix until smooth.
Unroll one sheet of puff pastry onto a baking tray lined with parchment paper.
Spread the frangipane filling over the pastry, leaving a 2 cm border around the edges.
Place the second sheet of puff pastry on top and seal the edges.
Create decorative patterns on top with a sharp knife and brush the top with egg yolk.
Bake for 30-35 minutes or until golden and set.
Let the cake cool slightly before serving.
