Equipment

  • Stand mixer with a dough hook
  • Baking sheet (18 x 13 inches)
  • Pizza wheel
  • Measuring cups and spoons
  • Plastic wrap

Ingredients

  • 4 3/4 cups bread flour spooned and leveled
  • 1 tsp yeast
  • 1 1/2 tsp salt
  • 1/2 tbsp granulated sugar
  • 6 tbsp unsalted butter melted
  • 3/4 cup warm water (105°F)
  • 1 cup warm milk (105°F)
  • 4 tbsp unsalted butter melted
  • 1 tbsp dried onion
  • 1 tsp dried oregano
  • 2 tsp garlic powder
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 3 tbsp grated Parmesan cheese

Instructions

  • In a stand mixer bowl, combine the bread flour, yeast, salt, sugar, melted butter, warm water, and warm milk. Start mixing on low speed until combined, then increase to high speed and knead for 5-7 minutes until smooth and elastic.
  • Transfer the dough to a greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.
  • Roll out the risen dough on a floured surface into an 18 x 13-inch rectangle. Transfer to a baking sheet and cut into 20 breadsticks. Let rise again for 30-60 minutes.
  • Mix the melted butter, dried onion, oregano, garlic powder, basil, and salt in a small bowl for the herbed butter.
  • Preheat the oven to 470°F (245°C). Brush the dough with 2 tablespoons of the herbed butter and bake for 10-12 minutes until golden brown.
  • Brush the baked breadsticks with the remaining herbed butter and sprinkle with Parmesan cheese. Serve warm with dipping sauce.

Notes

Make sure your water and milk are at 105°F to activate the yeast properly. Don't skip the second rise; it ensures the breadsticks are light and airy. Experiment with different herbs in the herbed butter for unique flavors. For storage, keep leftovers in foil at room temperature for up to 5 days or freeze for longer storage. They stay soft and fresh this way!
