Instructions

  • In a medium bowl, whisk together the flour, protein powder, baking powder, baking soda, and salt.
  • In another bowl, beat the eggs, then add the almond milk, honey, applesauce, and vanilla extract. Whisk until smooth.
  • Pour the wet ingredients into the dry ingredients and gently fold together. Stir in optional mix-ins.
  • Scoop batter into the prepared muffin tin, filling each cup two-thirds full. Bake for 18–20 minutes or until a toothpick comes out clean.
