Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda

  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup granulated sugar

  • 1 cup chocolate chips

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  • In a large bowl, blend the pumpkin puree, vegetable oil, eggs, granulated sugar, brown sugar, and vanilla extract until smooth.
  • Gradually add the dry ingredients to the wet ingredients, stirring just until combined, then fold in the chocolate chips.
  • Pour the batter into the prepared loaf pan and bake for 55-65 minutes, until a toothpick inserted in the center comes out clean.
  • Cool the bread in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

For a richer taste, substitute vegetable oil with melted butter or coconut oil. Consider adding a teaspoon of orange zest for an extra flavor burst. Store the bread in an airtight container at room temperature for up to 3 days, or refrigerate for a week. For longer storage, freeze for up to 3 months.
