- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 1 cup chocolate chips
Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.
In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
In a large bowl, blend the pumpkin puree, vegetable oil, eggs, granulated sugar, brown sugar, and vanilla extract until smooth.
Gradually add the dry ingredients to the wet ingredients, stirring just until combined, then fold in the chocolate chips.
Pour the batter into the prepared loaf pan and bake for 55-65 minutes, until a toothpick inserted in the center comes out clean.
Cool the bread in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
For a richer taste, substitute vegetable oil with melted butter or coconut oil. Consider adding a teaspoon of orange zest for an extra flavor burst. Store the bread in an airtight container at room temperature for up to 3 days, or refrigerate for a week. For longer storage, freeze for up to 3 months.
