Ingredients

  • 80 g soft butter
  • 120 g sugar
  • 1 pinch of salt
  • 3 medium eggs
  • 150 g lean curd (quark)
  • 160 g wheat flour (Type 405)
  • 1 teaspoon baking powder

Instructions

  • Preheat your oven to 180°C (160°C fan) and line a muffin tin with paper liners or grease it.
  • In a mixing bowl, combine the soft butter, sugar, and salt. Beat until light and frothy.
  • Add the eggs one at a time, beating well after each addition. Stir in the quark until creamy.
  • In a separate bowl, mix the flour and baking powder, then gradually fold it into the wet ingredients to avoid overmixing.
  • Spoon the batter evenly into the prepared muffin tin and bake for about 30 minutes until golden brown and a toothpick comes out clean.
