- 1 cup cooked quinoa
- 1 cup all-purpose flour
- 1/2 cup almond milk (or regular milk)
- 1/4 cup honey or maple syrup
- 2 large eggs
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup fresh blueberries (or any fruit of your choice)
- 1/4 cup chopped nuts or seeds optional for added crunch
Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.
In a large mixing bowl, whisk together the eggs, melted coconut oil, honey (or maple syrup), almond milk, and vanilla extract until smooth.
In a separate bowl, sift together flour, baking powder, baking soda, and salt. Stir in the cooked quinoa.
Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in blueberries and optional nuts or seeds.
Spoon the batter into the muffin tin, filling each cup about three-quarters full. Bake for 18-20 minutes.
