Ingredients

  • 1 cup cooked quinoa
  • 1 cup all-purpose flour
  • 1/2 cup almond milk (or regular milk)
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup fresh blueberries (or any fruit of your choice)
  • 1/4 cup chopped nuts or seeds optional for added crunch

Instructions

  • Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.
  • In a large mixing bowl, whisk together the eggs, melted coconut oil, honey (or maple syrup), almond milk, and vanilla extract until smooth.
  • In a separate bowl, sift together flour, baking powder, baking soda, and salt. Stir in the cooked quinoa.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in blueberries and optional nuts or seeds.
  • Spoon the batter into the muffin tin, filling each cup about three-quarters full. Bake for 18-20 minutes.
