Ingredients

  • 1 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup fresh raspberries or frozen, thawed
  • 1/4 cup raspberry jam
  • 1 tablespoon cornstarch
  • 1/4 teaspoon ground cinnamon

Instructions

  • Preheat oven to 350°F (175°C). Cream together softened butter, sugar, and vanilla extract. Gradually add flour and salt. Press two-thirds of dough evenly into an 8x8-inch baking pan lined with parchment paper.
  • Toss raspberries with cornstarch and cinnamon. Spread over crust, then dot with raspberry jam.
  • Crumble remaining dough over filling. Sprinkle with extra cinnamon. Bake for 30-35 mins until golden.
