- 250 g raspberries
- 5 pcs eggs
- 200 g mascarpone
- 150 g sugar
- 100 g biscuits cuillère (ladyfingers)
- 40 cl heavy cream
- 1 sachet vanilla sugar
- 1 tbsp lemon juice
- 40 g dark chocolate for decoration
Separate the egg whites from the yolks.
Beat the egg yolks with 100 g of sugar until pale and creamy.
Whisk the egg whites until stiff peaks form.
Gently fold the egg whites into the yolk mixture.
Spread the batter on a baking sheet lined with parchment paper.
Bake at 180°C (356°F) for 10-12 minutes until golden and let cool completely.
Whip the heavy cream with 50 g of sugar and vanilla sugar until stiff peaks form.
Combine mascarpone cheese with lemon juice and fold in the whipped cream gently.
Spread mascarpone filling over the cooled cake, leaving a border.
Scatter raspberries over the cream.
Roll the cake into a log using parchment paper.
Wrap the log in plastic wrap and refrigerate for at least 4 hours.
Melt dark chocolate and pour it over the set log, then garnish with additional raspberries.
