Ingredients

  • 250 g raspberries
  • 5 pcs eggs
  • 200 g mascarpone
  • 150 g sugar
  • 100 g biscuits cuillère (ladyfingers)
  • 40 cl heavy cream
  • 1 sachet vanilla sugar
  • 1 tbsp lemon juice
  • 40 g dark chocolate for decoration

Instructions

  • Separate the egg whites from the yolks.
  • Beat the egg yolks with 100 g of sugar until pale and creamy.
  • Whisk the egg whites until stiff peaks form.
  • Gently fold the egg whites into the yolk mixture.
  • Spread the batter on a baking sheet lined with parchment paper.
  • Bake at 180°C (356°F) for 10-12 minutes until golden and let cool completely.
  • Whip the heavy cream with 50 g of sugar and vanilla sugar until stiff peaks form.
  • Combine mascarpone cheese with lemon juice and fold in the whipped cream gently.
  • Spread mascarpone filling over the cooled cake, leaving a border.
  • Scatter raspberries over the cream.
  • Roll the cake into a log using parchment paper.
  • Wrap the log in plastic wrap and refrigerate for at least 4 hours.
  • Melt dark chocolate and pour it over the set log, then garnish with additional raspberries.
