  • 1/2 cup unsalted butter, melted

  • 1 teaspoon vanilla extract
  • 1 cup raspberry jam or fresh raspberries
  • 1 tablespoon cornstarch (if using fresh raspberries)

Instructions

  • Start by preheating your oven to 350°F (175°C). Grease an 8x8-inch baking pan and line it with parchment paper for easy removal later. In a large mixing bowl, combine the flour, oats, melted butter, brown sugar, salt, and vanilla extract. Use your fingers or a fork to mix until the texture resembles coarse crumbs.
  • Press about two-thirds of the oat mixture evenly into the bottom of the prepared pan. Use the back of a spoon or your fingers to ensure it’s compact and smooth.
  • If you’re using fresh raspberries, toss them with cornstarch to thicken the juices. Spread the raspberry jam or fresh berries evenly over the crust.
  • Sprinkle the remaining oat mixture over the raspberry layer, gently pressing it down to create a crumbly topping.
