Ingredients

  • 1 cup unsalted butter melted
  • 1 large egg
  • 1 cup light brown sugar packed
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour

  • 1 cup semi-sweet chocolate chips for sprinkling
  • 1 1/3 cups sweetened shredded coconut loosely laid in measuring cup, not packed
  • 10 oz sweetened condensed milk two-thirds of one 14-ounce can
  • 4 to 5 oz salted caramel sauce homemade or store-bought
  • 1/2 cup semi-sweet chocolate chips melted for drizzling

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9-inch pie dish.
  • In a large microwave-safe bowl, melt the butter and let it cool slightly.
  • Add the egg, brown sugar, and vanilla extract to the butter and whisk until well combined.
  • Stir in the flour and salt until just combined to form a soft dough.
  • Pour the batter into the prepared pie dish and smooth the top.
  • Bake for 10 to 12 minutes until the edges firm up and the center begins to set.
  • Remove from the oven and sprinkle chocolate chips over the crust, then add shredded coconut.
  • Drizzle sweetened condensed milk and caramel sauce over the toppings.
  • Bake for another 25 minutes until the edges bubble and the center is set.
  • Let the pie cool slightly, then melt the remaining chocolate chips and drizzle over the top.
  • Cool the pie completely on a wire rack for at least 4 hours or overnight before serving.
