Ingredients

  • 1000 g skyr yogurt
  • 170 g sugar
  • 1 package vanilla pudding powder or 40 g cornstarch
  • 200 g cream
  • 4 medium eggs

Instructions

  • Preheat your oven to 180°C (160°C for fan ovens) and line the bottom of a 26 cm springform pan with baking paper.
  • In a large mixing bowl, combine the skyr yogurt, sugar, and vanilla pudding powder, stirring until smooth and creamy.
  • Add the cream and eggs one at a time, whisking gently to keep the mixture airy.
  • Pour the batter into the prepared pan evenly.
  • Bake for 15 minutes, then reduce the temperature to 160°C (140°C for fan ovens) and bake for another 35 minutes.
  • After baking, let the cake cool completely before removing it from the mold and peeling off the baking paper.
  • Garnish with fresh blueberries or your choice of toppings, slice, and serve.
