Equipment

  • Mixing bowls
  • Electric mixer or whisk
  • Spatula
  • Baking sheets
  • Parchment paper

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2 cups crushed graham crackers
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows

Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Crack in the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring just until combined. Fold in the crushed graham crackers and chocolate chips.
  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each cookie. Press a few mini marshmallows onto the tops before baking.
  • Bake in the oven for 8-10 minutes, or until the edges are golden brown.

Notes

These S'mores Cookies capture the essence of a campfire with their gooey texture and nostalgic flavor, making them perfect for gatherings or cozy evenings at home. Try adding a sprinkle of sea salt for a sweet-and-salty contrast!
