Ingredients

  • 1 cup all-purpose flour
  • 2 cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1 cup strong black coffee, cooled
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup fresh strawberries, chopped

Instructions

  • Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  • In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  • Add the eggs, buttermilk, cooled coffee, vegetable oil, and vanilla extract to the dry ingredients and beat on medium speed for about 2 minutes.
  • Gently stir in the chopped fresh strawberries.
  • Pour the batter evenly into the prepared pans and smooth the tops with a spatula.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.

Notes

For an extra-rich texture, add a half cup of sour cream to the batter. Soak chopped strawberries in sugar and a splash of vanilla for about 15 minutes to enhance their sweetness before adding them. Store at room temperature for up to 3 days, or refrigerate for up to a week. Freeze individual slices for up to 3 months.
