Ingredients

  • 1 chocolate cake (store-bought or homemade), cut into cubes
  • 1 cup freeze-dried strawberries
  • 1 cup heavy cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon LorAnn Strawberry Bakery Emulsion
  • 1 cup fresh strawberries hulled and sliced
  • 2 tablespoons sugar for compote
  • 2 tablespoons water
  • 1 teaspoon lemon juice
  • q.s. fresh strawberries for chocolate-covered strawberries
  • q.s. semi-sweet chocolate chips

Instructions

  • Pulse the freeze-dried strawberries in a food processor until they turn into a fine powder.
  • In a mixing bowl, whip the heavy cream, powdered sugar, and strawberry emulsion until stiff peaks form.
  • Gently fold in the strawberry powder until fully incorporated. Set aside.
  • In a saucepan, combine sliced strawberries, sugar, water, and lemon juice. Cook over medium heat, stirring occasionally, until thickened (about 5-7 minutes). Let cool.
  • Melt semi-sweet chocolate chips in the microwave in 30-second intervals, stirring in between. Dip strawberries into melted chocolate and place on parchment paper to set.
  • In serving glasses, layer chocolate cake cubes, strawberry mousse, strawberry compote, and fresh strawberries, repeating the layers and ending with mousse.
  • Garnish each parfait with a chocolate-covered strawberry.

Notes

For a dairy-free version, swap the heavy cream with coconut cream. If freeze-dried strawberries aren't available, strawberry powder or fresh strawberries blended and strained can be used. The parfaits can be refrigerated for up to 2 days, but for best texture, assemble just before serving. Enhance flavor by sprinkling sea salt on chocolate-covered strawberries.
