Ingredients

  • 250 grams white cooking chocolate
  • 80 ml thickened/heavy cream
  • 15 grams freeze-dried strawberries or strawberry powder plus extra for garnish
  • 150 grams white cooking chocolate for coating

Instructions

  • Place the freeze-dried strawberries in a small food processor and blend into a fine powder, then sift through a fine mesh sieve to remove lumps (skip if using strawberry powder).
  • In a small saucepan, heat the cream over low heat until it begins to simmer, then turn off the heat.
  • Finely chop the white chocolate and place it in a medium heat-proof bowl. Microwave for 30 seconds to 1 minute, until slightly melted.
  • Pour the hot cream over the chopped chocolate and let sit for 2 minutes, then stir gently until smooth and shiny.
  • Stir in the strawberry powder until fully incorporated and lump-free.
  • Pour the ganache into a small dish, cover with plastic wrap touching the surface, and refrigerate for at least 3 hours until firm.
  • Using a small scoop, portion the ganache and roll into balls, then place on a baking sheet lined with parchment paper and chill until firm (about 15 minutes in the freezer or 30 minutes in the fridge).
  • Chop the chocolate for coating and melt in the microwave or over a double boiler. Dip each truffle in melted chocolate and place back on the lined tray, optionally sprinkle with crushed strawberries.
  • Chill the coated truffles in the fridge for at least 30 minutes until the chocolate coating sets.
