Ingredients

  • 1 cup crushed cookies (digestive or graham type)
  • ½ cup melted butter
  • 2 tablespoons sugar
  • 1 cup cream cheese (Philadelphia type)
  • ½ cup glass sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh, clean, and sliced strawberries
  • ½ cup strawberry jam (optional, for brightness)

Instructions

  • Preheat your oven to 180°C (350°F).
  • In a mixing bowl, combine the crushed cookies, melted butter, and sugar; press this mixture firmly into the bottom of tartlet molds.
  • Bake for 10 minutes, then let it cool completely.
  • In another bowl, beat the cream cheese, sugar, and vanilla extract until smooth and velvety.
  • Spoon the cream cheese mixture onto the cooled cookie bases, spreading it gently.
  • Arrange the strawberry slices on top in a decorative pattern.
  • Chill the assembled tartlets for 10 minutes.
  • Warm the strawberry jam until liquid and brush it over the strawberries.
  • Refrigerate the tartlets for at least an hour before serving.

Notes

For a dairy-free version, substitute coconut oil for butter and use vegan cream cheese.
You can also use shortbread or plain crackers if you don't have digestive cookies.
Store in an airtight container in the refrigerator for up to 2 days, or freeze individually wrapped for up to a month.
If making in advance, prepare components a day ahead and assemble before chilling for best results.
For extra flavor, try adding grated lemon zest into the cream cheese filling.
