Ingredients

  • 3 large sweet potatoes approximately 1 pound
  • 3 large eggs at room temperature
  • to taste salt
  • q.s. cooking spray or olive oil for greasing

Instructions

  • Peel the sweet potatoes completely using a potato peeler.
  • Grate the sweet potatoes using the smaller shredding holes on a box grater and drain excess liquid using cheesecloth.
  • Transfer the drained sweet potatoes to a large bowl, add eggs and salt, and mix well with a fork.
  • Preheat your waffle maker and spray it with cooking spray.
  • Add approximately 1/4 cup of batter for a mini waffle maker or 1 cup for a full-sized waffle maker.
  • Close the waffle maker and cook for about 5 minutes until golden brown.
  • Transfer the cooked waffle to a plate and repeat with the remaining batter.
  • Serve warm with desired toppings.

Notes

Make sure to drain the sweet potatoes thoroughly to avoid mushy waffles. Experiment with toppings like fresh berries, whipped cream, or sour cream with herbs for a savory option.
