- 3 large eggs at room temperature

Peel the sweet potatoes completely using a potato peeler.
Grate the sweet potatoes using the smaller shredding holes on a box grater and drain excess liquid using cheesecloth.
Transfer the drained sweet potatoes to a large bowl, add eggs and salt, and mix well with a fork.
Preheat your waffle maker and spray it with cooking spray.
Add approximately 1/4 cup of batter for a mini waffle maker or 1 cup for a full-sized waffle maker.
Close the waffle maker and cook for about 5 minutes until golden brown.
