- 0.75 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup strong brewed coffee, cooled
- 2 tablespoons rum or brandy optional
- 8 oz mascarpone cheese
- 1 cup heavy whipping cream
- 0.25 cup powdered sugar
- q.s. cocoa powder for dusting
Preheat your oven to 350°F (175°C). Grease two round cake pans and set aside.
In a large mixing bowl, beat the egg whites until stiff peaks form. Gradually add sugar while continuing to mix. Fold in the egg yolks, one at a time, and vanilla extract.
Sift the flour over the mixture and fold it in using a spatula. Divide batter into prepared pans. Bake for 20-25 minutes, then let cool.
