Ingredients

  • 4 eggs, separated
  • 0.75 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup strong brewed coffee, cooled
  • 2 tablespoons rum or brandy optional
  • 8 oz mascarpone cheese
  • 1 cup heavy whipping cream
  • 0.25 cup powdered sugar
  • q.s. cocoa powder for dusting

Instructions

  • Preheat your oven to 350°F (175°C). Grease two round cake pans and set aside.
  • In a large mixing bowl, beat the egg whites until stiff peaks form. Gradually add sugar while continuing to mix. Fold in the egg yolks, one at a time, and vanilla extract.
  • Sift the flour over the mixture and fold it in using a spatula. Divide batter into prepared pans. Bake for 20-25 minutes, then let cool.
  • Mix the coffee with rum or brandy, if using. Lightly brush onto the sponge layers with a pastry brush.
  • In a chilled bowl, whip the heavy cream and powdered sugar to soft peaks. Add mascarpone and whisk until smooth.
  • Layer one sponge with half the mascarpone cream, add second sponge, then the rest of the cream. Dust with cocoa powder.
  • Refrigerate the cake for at least 2 hours before serving.
