Ingredients

  • 2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 1 cup dark chocolate, melted
  • 1 cup milk chocolate, melted
  • 1 cup white chocolate, melted
  • 3 cups heavy cream, divided
  • 1/4 cup powdered sugar for each mousse layer
  • 1/2 cup heavy cream for ganache
  • 1/2 cup dark chocolate, chopped for ganache

Instructions

  • Mix the chocolate cookie crumbs with melted butter until it resembles wet sand; press it into the bottom of a springform pan and refrigerate.
  • Whip 1 cup of heavy cream with 1/4 cup powdered sugar until soft peaks form; fold in melted dark chocolate. Repeat this for milk and white chocolate layers.
  • Spread dark chocolate mousse over the crust, followed by milk chocolate, and then white chocolate. Smooth each layer and refrigerate for 4-6 hours.
  • Heat heavy cream until warm; pour over chopped dark chocolate and stir until smooth. Pour ganache over the cake.
  • Garnish with fresh raspberries, chocolate swirls, and mint leaves; slice carefully with a hot knife and serve.
