Ingredients

  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/4 cup melted butter
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1 cup heavy cream
  • 1/2 cup dark chocolate, melted
  • 1/4 cup powdered sugar
  • 1 cup heavy cream
  • 1/2 cup milk chocolate, melted
  • 1 cup heavy cream
  • 1/2 cup white chocolate, melted
  • q.s. cocoa powder for dusting
  • q.s. fresh raspberries
  • q.s. decorative edible flowers

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  • In a mixing bowl, whisk together the flour, cocoa powder, and sugar.
  • Add the melted butter, eggs, and vanilla extract; stir until smooth.
  • Pour the batter into the pan and spread it evenly, then bake for 20-25 minutes. Let cool completely.
  • For the dark chocolate mousse, whip heavy cream and powdered sugar until stiff peaks form; fold in melted dark chocolate and spread over the cooled base. Chill to set.
  • For the milk chocolate mousse, whip heavy cream and powdered sugar until stiff peaks form; fold in melted milk chocolate and spread over the dark chocolate layer. Chill again to set.
  • For the white chocolate mousse, whip heavy cream and powdered sugar until stiff peaks form; fold in melted white chocolate and spread over the milk chocolate layer. Chill for at least 3 hours to set.
  • Dust the top with cocoa powder and arrange fresh raspberries and edible flowers before serving.

Notes

Use high-quality chocolate for the best results; it makes a significant difference in flavor. Chill each layer thoroughly before adding the next to prevent mixing. Dust the cocoa powder just before serving to keep it looking fresh. Store leftovers in an airtight container in the fridge for up to 3 days or freeze slices for up to 2 months. Bring to room temperature before serving. Do not stack heavy items on top of the dessert, as it can crush the delicate layers.
