Instructions

  • Preheat your oven to 325°F (165°C).
  • In a medium bowl, mix graham cracker crumbs, shredded coconut, sugar, and cinnamon until combined.
  • Pour in the melted butter and stir until the mixture resembles wet sand.
  • Press the mixture firmly into a 9-inch springform pan and bake for 8-10 minutes until golden. Let it cool.
  • In a large bowl, beat the softened cream cheese until smooth.
  • Add sour cream and sweetened condensed milk, mixing until silky.
  • Stir in key lime juice, lime zest, and vanilla extract.
  • Beat in the eggs one at a time, mixing well after each.
  • Pour the filling over the cooled crust.
  • In a chilled bowl, whip heavy cream, coconut cream, and powdered sugar until soft peaks form.
  • Gently fold in pineapple juice and crushed pineapple.
  • Spread piña colada fluff over the cheesecake and refrigerate for 1-2 hours.
  • Before serving, add whipped cream, lime wedges, shredded coconut, pineapple chunks, and maraschino cherries.
