  • Spatula
  • 9-inch round cake pan
  • Wire Cooling Rack

Ingredients

  • 1 cup butter, melted
  • 225 g cream cheese, at room temperature
  • 2 cups sugar
  • 3 large eggs
  • 1 teaspoon vanilla essence
  • 1 cup crushed pineapple, well drained
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon sodium bicarbonate (baking soda)
  • 0.5 teaspoon salt
  • 1 cup grated coconut
  • 0.5 cup milk

Instructions

  • Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
  • In a large mixing bowl, beat the melted butter and cream cheese until smooth, then add sugar and mix until fluffy.
  • Add eggs one at a time, mixing fully before adding the next, then stir in the vanilla essence.
  • In another bowl, whisk together flour, baking powder, baking soda, and salt, then gradually add to the wet mixture alternating with the milk.
  • Fold in the crushed pineapple and grated coconut, ensuring not to overmix.
  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 60-70 minutes until a toothpick inserted into the center comes out clean.
  • Let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

For a dairy-free option, use margarine or coconut oil instead of butter and substitute Greek yogurt for cream cheese. Be sure to drain the pineapple well to prevent the cake from becoming soggy. Consider brushing the cooled cake with simple syrup for enhanced moisture and sweetness. This cake can be stored in an airtight container at room temperature for up to three days or in the freezer for up to two months.
