Ingredients

  • 4 pieces baguettes
  • 200 g turkey slices cooked or roasted
  • 150 g mozzarella sliced or shredded
  • 1 piece red bell pepper sliced into strips
  • 1 piece onion thinly sliced
  • 2 tbsp olive oil
  • 1 tsp herbs de Provence
  • 1 tsp Dijon mustard optional
  • q.s. salt to taste
  • q.s. pepper to taste
  • a handful arugula or lettuce optional

Instructions

  • Preheat the oven to 180°C (350°F).
  • In a pan, heat the olive oil over medium heat. Add onions and cook until translucent, about 5 minutes.
  • Toss in the red bell pepper strips and continue cooking for about 5 more minutes. Season with herbs de Provence, salt, and pepper. Set aside.
  • Cut the baguettes lengthwise, leaving one side intact to form a pocket. Optionally, spread some Dijon mustard inside.
  • Lay turkey slices inside the baguettes, followed by sautéed vegetables and a generous layer of mozzarella.
  • Place the assembled baguettes in the preheated oven and bake for about 10 minutes, until the mozzarella is melted and lightly golden.
  • Add a few leaves of arugula or lettuce right before serving.

Notes

Use fresh, high-quality ingredients for the best flavor. Don’t overload the fillings; aim for a balanced ratio of bread to filling. For a twist, try adding a drizzle of balsamic glaze after baking. Store leftovers in an airtight container in the refrigerator for up to 2 days, or freeze for up to 2 months. Reheat at 180°C (350°F) for 5-7 minutes.
