Ingredients

  • 500 g Cottage Cheese
  • 2 cups Sugar
  • 90 g Butter at room temperature
  • 6 Eggs separated into yolks and whites
  • 2 tablespoons Baking Powder
  • 1 cup Wheat Flour
  • to taste Minced Walnuts
  • to taste Raisins

Instructions

  • Preheat your oven to 180°C (350°F) and grease a loaf pan, sprinkling it with ground bread crumbs.
  • In a large mixing bowl, beat the cottage cheese, sugar, and softened butter until light and fluffy.
  • Add egg yolks one by one, beating well after each addition.
  • Sift the wheat flour and baking powder together, then fold them into the wet mixture until just combined.
  • In a separate bowl, whisk egg whites until stiff peaks form, then gently fold into the batter.
  • Fold in the minced walnuts and raisins.
  • Pour the batter into the prepared loaf pan and smooth the top, then bake for about an hour.
  • Once baked, let the bread cool in the pan for 10 minutes before unmolding and slicing.
