Ingredients

  • 500 g flour
  • 150 g plain full-fat or semi-skimmed yogurt
  • 80 g sugar
  • 1 packet active dry yeast or 15 g of fresh yeast
  • 2 units eggs
  • 100 g melted butter
  • a pinch salt
  • 1 tsp vanilla extract (optional)
  • 1 unit egg yolk for glazing

Instructions

  • In a small bowl, dissolve the yeast in 100 ml of warm water with a tablespoon of sugar and let it sit for about 10 minutes until frothy.
  • In a large mixing bowl, combine the flour, remaining sugar, and salt, then make a well in the center and add the activated yeast mixture, yogurt, eggs, and vanilla extract.
  • Pour in the melted butter and knead the dough for about 10 minutes until smooth and elastic.
  • Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 1 hour, or until it doubles in size.
  • Gently punch the dough down and shape it into a loaf, placing it in a greased loaf pan or on a baking sheet.
  • Cover the shaped dough with a towel again and let it rise for another 30 to 45 minutes.
  • Preheat your oven to 180°C (fan) or 200°C (conventional) and brush the top of the dough with beaten egg yolk.
  • Bake the Yogurt Brioche Bread for 25 to 30 minutes until golden brown and sounding hollow when tapped on the bottom.
  • Let the bread cool on a wire rack before slicing.

Notes

If you don’t have yogurt, you can use sour cream or buttermilk. For a dairy-free version, use a plant-based yogurt and vegan butter. To enhance the flavor, consider infusing the melted butter with fresh thyme or a vanilla bean before adding it to the dough. Store the bread in an airtight container at room temperature for up to 3 days, or wrap it and freeze for up to 3 months.
