Ingredients

  • 1 cup granulated sugar
  • 1 cup cream cheese, softened
  • 1 tsp vanilla extract
  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 3 large eggs
  • 1 tsp ground cinnamon
  • 1 1/2 cups sour cream
  • 1/2 cup brown sugar

Instructions

  • Preheat the oven to 325°F (160°C).
  • In a mixing bowl, combine melted butter with graham cracker crumbs and stir until sandy texture forms.
  • Press the mixture firmly into the bottom of a removable mold to form the crust.
  • In a large bowl, beat cream cheese and granulated sugar until smooth.
  • Add eggs one at a time, beating well after each addition.
  • Mix in vanilla extract, sour cream, and ground cinnamon until well combined with no lumps.
  • Pour the cheese mixture over the prepared crust.
  • In a small bowl, mix brown sugar with additional cinnamon and sprinkle over the cheesecake.
  • Bake for 50-60 minutes, until the center is firm but slightly jiggly.
  • Allow the cheesecake to cool completely at room temperature and refrigerate for at least 4 hours or overnight.
  • Unmold and cut into portions; serve with whipped cream or ice cream.

Notes

For a unique crust flavor, try using honey graham crackers. Swap granulated sugar with coconut sugar for a healthier option. Greek yogurt can replace sour cream for a tangy twist. To enhance flavor, add a pinch of nutmeg to the filling. For an impressive presentation, drizzle caramel sauce and garnish with fresh berries.
