Ingredients

  • 2 cups wheat flour
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 cup mashed ripe bananas (about 2 to 3 bananas)
  • 1/2 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt

Instructions

  • Preheat your oven to 180°C (350°F) and grease and flour a medium-sized pan.
  • In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, beat the softened butter with the eggs until creamy. Add the mashed bananas, milk, and vanilla extract, mixing well.
  • Gradually add the dry ingredients to the banana mixture, mixing until homogeneous but avoiding overmixing.
  • Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
  • Let the cake cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

Use very ripe bananas for the best flavor and moisture. For an extra twist, add a pinch of cinnamon to the dry ingredients. Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to 5 days. For long-term storage, freeze slices wrapped tightly for up to 3 months.
