Toothpick
Wire rack
- 2 cups wheat flour
- 1 cup sugar
- 1/2 cup butter, softened
- 1 cup mashed ripe bananas (about 2 to 3 bananas)
- 1/2 cup milk
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
Preheat your oven to 180°C (350°F) and grease and flour a medium-sized pan.
In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, beat the softened butter with the eggs until creamy. Add the mashed bananas, milk, and vanilla extract, mixing well.
Gradually add the dry ingredients to the banana mixture, mixing until homogeneous but avoiding overmixing.
Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
Let the cake cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
Use very ripe bananas for the best flavor and moisture. For an extra twist, add a pinch of cinnamon to the dry ingredients. Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to 5 days. For long-term storage, freeze slices wrapped tightly for up to 3 months.
