Ingredients

  • 2 cups Graham Cracker Crumbs
  • ½ cup Unsalted Butter, Melted
  • 2 tablespoons Granulated Sugar
  • 16 oz Cream Cheese, Softened
  • ¾ cup Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • 2 large Eggs
  • ½ cup Melted White Chocolate, Cooled Slightly
  • 2 tablespoons Lemon Juice
  • Zest of 1 Lemon Lemon Zest
  • ½ cup Lemon Curd
  • 1 tablespoon Water

Instructions

  • Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
  • In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press firmly into the bottom of the pan.
  • Bake the crust for 10 minutes and let it cool.
  • In a large mixing bowl, beat cream cheese and sugar until smooth. Add vanilla extract and eggs one at a time, mixing gently.
  • Stir in melted white chocolate, lemon juice, and zest. Pour the mixture over the cooled crust and smooth the top.
  • Bake the cheesecake for 45-50 minutes; the center should jiggle slightly.
  • Turn off the oven and leave the door ajar for 1 hour for gradual cooling.
  • Chill the cheesecake in the fridge for at least 4 hours or overnight.
  • Mix lemon curd with water to thin it. Spread it over the chilled cheesecake.
  • Decorate with white chocolate curls, a lemon slice, and whipped cream.

Notes

Use high-quality white chocolate for the best flavor. Let all ingredients reach room temperature to avoid lumps. Avoid overbaking; a slightly jiggle in the center is okay. Store leftovers in the fridge for up to 5 days or freeze individual slices for future enjoyment. Thaw frozen cheesecake overnight in the fridge before serving.
