Ingredients

  • 2 cups Oreo cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 3 packages cream cheese, softened

  • 3 large eggs
  • 1 cup sour cream
  • 1/2 cup heavy cream
  • Zest of 2 lemons

  • 1 cup white chocolate chips, melted

Instructions

  • Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  • In a bowl, mix the Oreo crumbs with melted butter and press the mixture firmly into the base of the pan. Bake for 8–10 minutes, then let cool.
  • Beat the cream cheese, sugar, lemon extract, and zest until smooth. Add eggs one at a time, mixing gently. Stir in sour cream, heavy cream, and melted white chocolate.
  • Pour the filling over the cooled crust and bake for 55–60 minutes, until edges are set with a slight jiggle in the center.
  • Turn off the oven, leave the door ajar, and cool the cheesecake gradually before refrigerating for at least 4 hours. Decorate with lemon curd, lemon slices, and whole Oreos before serving.

Room-temperature ingredients blend smoothly, so take them out ahead of time.
