Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 2 cups heavy whipping cream
  • 1 can (20 oz) crushed pineapple, drained
  • 1 can (20 oz) pineapple rings, drained
  • q.s. fresh raspberries for garnish to taste
  • q.s. whipped cream for topping to taste

Instructions

  • In a medium bowl, mix together the graham cracker crumbs and melted butter until well combined.
  • Press this mixture into the bottom of a 9x13-inch baking dish to form the crust.
  • In a large bowl, beat the cream cheese and powdered sugar until smooth and creamy.
  • In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  • Spoon half of the cream cheese mixture over the prepared crust and spread it evenly.
  • Sprinkle the drained crushed pineapple over the cream cheese layer.
  • Spread the remaining cream cheese mixture on top of the pineapple.
  • Arrange the pineapple rings on top and garnish with fresh raspberries and whipped cream.
  • Refrigerate for at least 4 hours or until set before serving.

Notes

Make sure all ingredients are at room temperature for a smoother texture. Feel free to substitute graham cracker crumbs with digestive biscuit crumbs or cookie crumbs. For a lighter version, use low-fat cream cheese and Greek yogurt instead of heavy cream. This dessert can be made a day in advance and stored in the refrigerator for up to 5 days. For longer storage, it can be frozen for up to 2 months. Just let it thaw in the refrigerator before serving. For an extra flavor boost, add a teaspoon of vanilla extract to the cream cheese mixture.
