Ingredients

  • 1 1/4 cup almond butter
  • 1/3 cup honey
  • 2 tsp vanilla extract
  • 2 cups old-fashioned oats briefly processed
  • 1 cup puffed rice
  • 3 tbsp sliced almonds
  • 3 tbsp chopped cashews
  • 3 tbsp chopped walnuts
  • 2 tbsp golden flaxseed optional
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup chopped dark chocolate
  • 1/4 cup dried pineapple pieces
  • 1/4 cup coconut chips

Instructions

  • Line a square mold with parchment paper and set aside.
  • In a microwave-safe bowl, combine almond butter and honey, then heat until smooth; stir in vanilla extract.
  • In a large mixing bowl, combine oats, puffed rice, nuts, cinnamon, and salt; mix well.
  • Pour the warm almond butter mixture over the dry ingredients and mix thoroughly; fold in dark chocolate, dried pineapple, and coconut chips.
  • Transfer the mixture to the mold and press down firmly; decorate the top if desired.
  • Refrigerate for at least two hours, then slice into bars.

Notes

For a vegan option, replace honey with maple syrup.
Feel free to swap nuts or dried fruits based on preferences.
Store in an airtight container for up to a week, or freeze for longer storage.
Adding toasted coconut chips enhances the tropical flavor.
